IRFU Performance Chef Maurice McGeehan brings us his latest recipe to try at home - tasty Easter Cookies for all the family to enjoy!
The recipe is below:
(Makes 20 Cookies)
• 200g Plain flour
• 100g Oats
• 175g Butter softened
• 200g Light brown soft sugar
• 100g Caster sugar
• 1 tbsp Vanilla extract
• 30g Cranberries
• 50g Chocolate pieces
• 2 Eggs
• ½ tsp Bicarbonate of soda
• 1 cup Mini chocolate Easter eggs
Method:
Heat oven to 170C fan, then line two baking sheets with baking parchment (paper).
Place the butter, sugars, vanilla extract into the mixing bowl and whisk until it goes white and fluffy.
Then add the eggs and keep whisking. Add the oats, flour, bicarb and a pinch of salt, then use a spatula to mix together before adding the chocolate chunks and mix again until everything is combined.
Scoop out the cookie dough onto the baking sheets, about the size of a table tennis ball and make sure to leave plenty of space between each one.
Push the mini egg pieces into the tops and bake for 15-18 mins then remove from the oven and leave to cool for 10 mins before transferring to a wire rack. Once the cookies have chilled, they are good to go.
